Esta vez la historia de la receta tendrá que ser en dos idiomas. Nada fuera de lo normal, así es mi vida desde hace 14 años, Bilingüe.
ONCE UPON A TIME...
One day I met somebody, I never never expected that this man was going to be in my life forever.
First of all, He was an american and I was mexican... not a very good combination especially when both are passionate about our countries, stubborn and very strong personalities... not a match.
But here we are, 14 years later, the american and the mexican, always defending their point of view, but loving each other so much. So many people ask me how is that we are together being so different? And I think the secret is that I admire and respect him so much, and He let me be who I am, He supports me in every way, He admire me too. We are not the perfect match, we do have very different personalities, but the strong base of our relationship is LOVE, RESPECT, ADMIRATION, SUPPORT, FREEDOM... and these keep us going.
Funny enough, I have a husband that LOVES MEXICAN FOOD, an expert, if I can say it. He has experience the good and the bad in México, I did the same in USA, so we both agree that HOME is where we are together, no matter which country we are living in, and it has been 14 years of moving constantly...EXPATS, they call us.
I have so many things to be grateful for, so many that God is probably bored to read my list, but he knows that I have learnt to extend my arms every morning and be open to receive whatever life brings on every day, good or bad, cause this makes me stronger. Life is so short and is, indeed, a unique experience, I don´t want to miss a bit of it.
This week we celebrate Valentine´s day and it is also my 14th aniversary!
My husband has a very special place in this list. I have a wonderful husband, very dedicated in all he does, very optimist (something that I admire and envy once in a while), generous (incredibly), structured (something I also do not experience), always willing to change... and the most important thing is that every 28 days he stands the most depressed, angry, frustrated, irritable, moody, mean and weepy woman on earth...ME!
He has a saying about me: My wife is ¨HIGH MAINTENANCE¨
I love you with all my heart, there is nothing in the world I would change about us, nothing. Thank you.

Uno nunca sabe con quien terminará casado algún día. Mi historia, complicada desde un principio, él un americano y yo una mexicana, los dos completamente apasionados de nuestros respectivos paises, muy necios y con personalidades muy fuertes, no se perfilaba como una relación duradera o estable.
Ahora, después de 14 años juntos, el gringo y la mexicana, siempre a la defensiva a la hora de dar su punto de vista, pero amándose por sobre todas las cosas. Tanta gente me pregunta ¿Cómo es posible que sigan juntos cuando son tan diferentes? No hay secreto, creo que el éxito de nuestra relación se basa en que Yo lo admiro y lo respeto muchísimo, Él me permite ser quien soy, me apoya en todo y me admira también. No somos la pareja perfecta, eso no existe; tenemos personalidades completamente opuestas, yo soy demasiado social, hiperactiva, amiguera, bailadora, creativa...Él de pocos amigos, tranquilo, hombre de casa, sin ritmo alguno, muy cuadrado. Pero la base fuerte, la base estable de nuestra relación está basada en AMOR, RESPETO MUTUO, ADMIRACION, SOPORTE Y LIBERTAD, eso nos hace seguir adelante.
Lo más increible es que mi marido AMA la COMIDA MEXICANA, y es todo un experto en la materia. El ha experimentado lo bueno y lo malo de México y yo también he vivido las dos cosas en USA. Esto nos sirve para saber que nuestro HOGAR está cualquier parte del mundo mientras estemos unidos. Esto ha sido así ya desde hace 14 años cuando iniciamos la vida de EXPATRIADOS... así nos dicen.
Está semana se celebra el día del amor y la amistad, al día siguiente yo celebro mi aniversario número 14.
Tengo tanto que agradecerle a Dios que mi lista debe sonarle aburridísima porque es larguísima, pero el sabe que si algo he aprendido es a extender mis brazos todas las mañanas para poder recibir lo que la vida me traiga, bueno y malo, me ha hecho fuerte, me ha enseñado que la vida pasa tan rápido y que ésta es una oportunidad única.
Mi esposo tiene un lugar muy especial en la lista. Dios me mandó un hombre maravilloso, dedicado en todo lo que hace, lleno de optimismo (algo que le admiro y le envidio muchas veces), generoso (increiblemente), estructurado (otra cosa que a mi no se me da mucho) y principalmente siempre dispuesto al cambio.... y la mayor de sus cualidades: Que soporta cada 28 días a la mujer más insoportable, chillona y detestable del mundo, eso sí es una cualidad.
Cuando le preguntan ¿Cómo es tu esposa? Él siempre responde: DE ALTO MANTENIMIENTO.
Te amo mil amor mio, no cambiaría por nada del mundo nada de lo que hemos vivido juntos. Gracias por ser y estar... Y como sé que amas el chocolate, aquí esta una receta adecuada para celebrar:
CHOCOLATE FUDGE CAKE
Ingredients
2 2/3 cups all-purpose flour
3/4 cup plus 1 tablespoon granulated sugar
1/3 cup light brown sugar
1/4 cup best-quality cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1/2 cup plus 2 tablespoons sour cream
1 tablespoon vanilla extract
3/4 cup unsalted butter, melted and cooled
1/2 cup corn oil
1 1/3 cups chilled water
For the fudge icing:
6 ounces bittersweet chocolate, minimum 70 percent cocoa solids
1 cup plus 2 tablespoons unsalted butter, softened
1 3/4 cups confectioners' sugar, sifted
1 tablespoon vanilla extract
Directions
Preheat the oven to 350 degrees F. Butter and line the bottom of 2 (8-inch) cake pans.
In a large bowl, mix together the flour, sugars, cocoa, baking powder, baking soda and salt. In another bowl or wide-necked measuring cup whisk together the eggs, sour cream and vanilla until blended. Using a standing electric mixer, beat together the melted butter and corn oil until just blended, then beat in the water. Add the dry ingredients all at once and mix together on a slow speed. Add the egg mixture, and mix again until everything is blended and then pour into the prepared tins.
Bake the cakes for 25 to 30 minutes (in my oven it takes 20 min. but it depends and varies), or until a cake-tester comes out clean. Cool the cakes in their pans on a wire rack for 15 minutes, and then turn the cakes out on the rack to cool completely.
For the icing:
Melt the chocolate in the microwave - 2 to 3 minutes on medium should do it.
Using a mixer, beat the butter until it's soft and creamy and then add the sifted confectioners' sugar and beat again until everything's light and fluffy. I know sifting is a pain, the 1 job in the kitchen I really hate, but you have to do it or the icing will be unsoothingly lumpy. Then gently add the vanilla and chocolate and mix together until everything is glossy and smooth.
Sandwich the middle of the cake with about a quarter of the icing, and then ice the top too, spreading with a rubber spatula. Decorate as you wish.

ReplyDelete2/3 tazas de harina
3/4 taza + una cucharada de azúcar
1/3 taza de azucar morena
1/4 taza de cocoa de buena calidad
2 cucharaditas de royal (polvo para hornear)
1 cucharadita de bicarbonato de sodio
1/2 cucharadita de sal
3 huevos
1/2 taza + 2 cucharadas de crema ácida
1 cucharadas de esencia de vainilla
3/4 taza mantequilla derretida y tibia
1/2 taza de aceite vegetal
1 1/3 tazas agua fria
Basicamente mezclar todo lo seco en un molde. En otro molde colocar los huevos, la crema y la vainilla, revolver bien.
En la batidora mezclar mantequilla, aceite ya que estan mezclados agregar el agua, seguir batiendo. Incorporar a esta mezcla los ingredientes secos a velocidad bajita para que no se espolvoree toda la cocina, y despues agregar la mezcla de los huevos y batir todo muy bien hasta que no haya grumos.
Se pueden utilizar dos moldes de 8 pulgadas o un molde para pastel cuadrado alto.
Hornear a 350F (180c) 20 a 25 min, si se utilizan los moldes chicos redondos, pero el molde cuadrado se lleva 45 a 50 min. Insertar un palito para checar el centro.
Para el fudge icing:
6 onzas de chocolate semi-amargo, 70% cocoa
1 taza + 2 cucharadas de mantequilla sin sal a temperatura ambiente.
1 3/4 tazas de azúcar glass o palpable, cernida.
1 cucharada extracto de vainilla
Derretir el chocolate a baño maría o en el microondas.
Batir la mantequilla hasta que esponje, agregar a cucharadas el azúcar glass, y cuando este todo mezclado agregar la vainilla y el chocolate derretido. Mezclar bien.
El icing se puede utilizar en medio de los pasteles (como sandwich) o para solo cubrir el pastel por arriba.
